This tea is shaded for several weeks before harvest, which increases the chlorophyll content and reduces bitterness, resulting in a smoother, richer taste. The Perfect Brewing Method
Brewing Gyokuro requires careful attention to detail to fully appreciate its nuanced flavors. Here’s a step-by-step guide to the ideal preparation:
1 Warm the Teaware: Fill a kyusu (Japanese teapot) with hot water (95-98°C) and wait until the teapot becomes warm. This step lowers the water temperature to the optimal range of 70-75°C.
2 Prepare the Cups: Pour the hot water from the teapot into three small tea cups, filling each about 70% (approximately 30cc). Allow the cups to warm up, then discard the water from the teapot. This will bring the temperature down to 60-65°C.
3 Transfer the Water: Pour the water from the cups into a yuzamashi (cooling vessel).
4 Measure the Tea Leaves: Place about 7-8g (roughly three heaping teaspoons) of Gyokuro tea leaves into the teapot for three servings. For five servings, use about 10-12g (four heaping teaspoons).
5 Cool the Water: Let the water in the yuzamashi cool until it feels lukewarm to the touch, around 45-55°C.
6 Brew the Tea: Pour the cooled water from the yuzamashi into the teapot. Allow the tea to steep for 1.5 to 2 minutes.
7 Serve the Tea: Evenly distribute the tea into the warmed cups, ensuring an equal concentration and quantity in each. Pour out the last drop to make sure you get the full flavor.
8 Second and Third Infusions: For the second infusion, use slightly hotter water (55-60°C) and steep for about 30 seconds. For the third infusion, increase the temperature further and steep for about 15 seconds.
