What is Kabusecha?
Kabusecha (かぶせ茶) is a shaded green tea that falls between sencha and gyokuro in terms of flavor and cultivation. By covering the tea plants for about 7 to 10 days, the leaves develop higher levels of chlorophyll and amino acids, resulting in a rich umami taste with a mild, less astringent finish.
